Just when you thought your favorite smoked pork spare ribs couldn’t get any better, we’ve taken it upon ourselves to experiment, research, and develop new methods to make them even more tantalizing. Our goal has been to perfect the art of achieving smoky ribs that are both tender and flavorful. The result? A recipe that will surely elevate your BBQ experience.

Preparing the Ribs

After unpacking the pork spare ribs, start by giving them a thorough rinse under cold water. Then, it’s time for some trimming. We recommend cutting off the long brisket bone along one side and squaring up the ends for a more appealing presentation.

To achieve a St. Louis style trim, use a sharp knife to remove the thick piece in the corner of the rack. Cut through the white cartilage and separate the brisket bone from the ribs. Finish by squaring up the end.

Trimming Spare Ribs

Next, flip the trimmed pork spare ribs over and remove the thick membrane attached to the bone side. Use a butter knife or a semi-sharp object to loosen the membrane, then grab hold and pull it straight up. You can use a paper towel or pliers for a better grip. If present, trim off any meat flap along the bone side to ensure even cooking.

Apply the Flavors

To help the rub stick, we recommend using plain yellow hotdog mustard. It won’t leave a mustard taste once cooked, and it works wonders as an adhesive. Squeeze a generous amount of mustard onto the bone side of the ribs and rub it in using your hands or a silicon brush.

Applying Mustard

For optimal flavor, apply our recommended rub all over the bone side. You can use a shaker to ensure an even distribution. Let the ribs sit for about 10 minutes, allowing the rub to absorb moisture and adhere to the meat. Then, flip the ribs over and repeat the mustard/rub process on the meat side.

Smoking the Ribs

Now that the ribs are fully prepped, it’s time to fire up your smoker. You can achieve great smoke flavor using various smoker types, whether it’s wood, charcoal, gas, or electric. Set your smoker to maintain a temperature of about 225°F with indirect heat. If possible, use a 50/50 mix of pecan and fruit wood for a delightful flavor combination.

Once your smoker is ready, lay the ribs on the grate bone side down and let them smoke for approximately 3 hours. During this time, avoid opening the lid or basting the ribs.

The Advanced 3-2-1 Method

Now we come to the advanced stage of the cooking process. Prepare a large piece of foil, approximately 36 inches long and 18 inches wide, and place it on a flat surface. Sprinkle brown sugar, our signature rub, and softened butter onto the center of the foil, creating a bed of flavorful ingredients.

Wrapping Ribs in Foil

Lay the rack of ribs, meat side down, onto this bed of ingredients. Carefully wrap the foil around the ribs, ensuring they are fully covered. For added protection, wrap the ribs in another layer of foil.

Place the wrapped ribs back on the smoker grate and cook for an additional 2 hours at 225°F, without the need for smoke during this step. At the end of these 2 hours, remove the wrapped ribs from the smoker and unwrap them. You may want to save the juices collected inside the foil for later use.

To firm up the ribs, return them to the smoker bone side down and cook for 1 more hour at 225°F. You can choose to add smoke during this final stage or not, depending on your preference.

The Perfect Finish

Once you remove the ribs from the smoker, allow them to rest for about 10 minutes before slicing. A target temperature of 195°F ensures optimal tenderness, but you can also check for doneness by testing the bend or using a reliable meat thermometer, such as the Thermapen.
