What Makes Country Style Ribs Special?

Contrary to their name, country style pork ribs do not contain any rib bones. They are actually cut from the pork shoulder, with some pieces still retaining bone fragments. These ribs are meatier compared to other cuts, providing you with an abundance of flavorful meat and fewer bones to worry about. For optimal tenderness, these ribs are best cooked low and slow, allowing the connective tissue to break down.

Cooking these ribs to perfection will result in a mouthwatering, richly flavored dish. The best part? Country style ribs are not only delicious but also budget-friendly, often going on sale. You can enjoy a flavorful and economical family meal and even savor the leftovers for days to come!

These ribs are sweet and savory, thanks to the Hey Grill Hey Rib Rub (available at the Hey Grill Hey Store!), apple juice, BBQ sauce, and a touch of smokiness from cooking on the smoker. They pair perfectly shredded on buns for sandwiches or served alongside mashed potatoes or rice. And don’t forget to drizzle that delicious BBQ sauce braising liquid over the top for an explosion of flavor!

Smoked Country Style Ribs: The Method

Ready to smoke the best country style ribs of your life? Follow these simple steps to achieve barbecue perfection:

  1. Preheat the grill: Start by preheating your smoker to 250 degrees F, using apple, cherry, or oak wood. Feel free to experiment with different wood flavors to enhance the taste.

  2. Prep the ribs: Wipe down the ribs with a paper towel, removing any bone fragments. Drizzle the ribs with olive oil and generously season all sides with your preferred rub, such as the Hey Grill Hey Rib Rub or your favorite BBQ rub.

  3. Smoke! Place the seasoned ribs directly on the grill grates and smoke them for approximately 4 hours, or until they reach an internal temperature of 165 degrees F. Once done, remove them from the smoker.

  4. Braise and finish smoking: In a disposable aluminum pan or 12″ cast iron skillet, combine sliced onions, ribs, BBQ sauce, and apple juice. Return the ribs to the smoker for an additional 2-3 hours, or until the internal temperature reaches 200 degrees F.

  5. Rest and serve: Allow the ribs to rest for 15 minutes before serving. You can elevate the flavors by serving them with extra BBQ sauce or the flavorful braising liquid. For a truly special meal, pair them with my mouthwatering Smoked Mashed Potatoes!

The Perfect Timing

When smoking country style ribs at a preheated temperature of 250 degrees F, you can expect them to cook fully in approximately 6-7 hours. However, always rely on the internal temperature for doneness rather than a strict time frame. Keep a reliable meat thermometer on hand and check the ribs around the 5-hour mark. Allow yourself some leeway, as each cook can vary. Remember, it’s done when it’s done!
