Salt and Pepper Short Ribs

Crispy, Juicy, and Homemade

There’s something extraordinary about the crispy and juicy texture of Salt and Pepper Short Ribs. If you’re like us, you can’t resist ordering them when enjoying dim sum. But why limit yourself to restaurants when you can recreate this scrumptious dish at home? During these times of lockdown, we’ve made it our mission to bring restaurant-quality dishes to your table.

A Harmonious Blend of Flavors

Salt and Pepper Short Ribs come in various variations, each with its own unique seasoning mix. You’ll find a Taiwanese version, a Chinese Sichuan version, and the classic HK Style version. Being lovers of all things delicious, we’ve combined the best elements from each style to create our homemade Salt and Pepper Short Ribs.

Secrets to Crunchy Perfection

To achieve the perfect balance of crispiness and juiciness, we start by marinating the short ribs with soy sauce, garlic powder, white pepper, Chinese cooking wine, egg, and corn starch. This marinade not only tenderizes the meat but also acts as a batter, preventing the meat from overcooking.

Once marinated, coat the short ribs with tapioca starch and allow them to rest for 5 minutes. Then, deep fry them for 6-7 minutes. Now, here’s the crucial step: turn up the heat to high and double fry for an additional 1-2 minutes. This little extra effort will make your short ribs even crispier!

The Art of Seasoning

Contrary to the name, Salt and Pepper Short Ribs involve more than just salt and pepper. Our seasoning powder consists of white pepper, salt, ground Sichuan pepper, garlic powder, ground chili, and mushroom powder. White pepper, a staple in Asian cuisine, brings a delightful spiciness to the dish. For the restaurant-style quality, we recommend using LKK Mushroom Powder, which contains MSG. If preferred, you can also grind up dehydrated shiitake mushrooms for a natural MSG flavor.
