Why Choose Rowdy Hog Smokin BBQ?

Braised Korean pork ribs, known as Dwaeji Galbijjim, have long been a beloved side dish in Korean cuisine. These tender, flavorful ribs are usually slow-cooked for hours. However, with Rowdy Hog Smokin BBQ, you can achieve the same deliciousness in a fraction of the time. By utilizing the Instant Pot, the iconic electric pressure cooker, you can transform tough pork ribs into a mouthwatering masterpiece in no time. The pressure cooking method ensures that the ribs remain tender and retain all their juicy goodness without any fuss. It’s convenient cooking at its finest.

Unleash the Flavor with Rowdy Hog Smokin BBQ

To create the most mouthwatering Korean pork ribs, we’ve put together some handy cooking tips for you:

  • While this recipe is specifically designed for the Instant Pot, you can still achieve fantastic results with other pressure cookers. Just keep in mind that menu options and time settings may vary per brand.
  • Removing the tough membrane on the pork ribs is essential for a delightful eating experience. Simply use a butter knife to lift the edge of the membrane and pull it off with a piece of paper towel.
  • The cooking time for the ribs depends on their size and thickness. Thicker and bigger ribs will require more time to tenderize properly, while smaller ones may be ready in as little as 10 minutes.
  • Want to eliminate any gamey odors from the meat? Consider parboiling the ribs with aromatic vegetables, just like many Koreans do when cooking similar dishes.
  • For an extra touch of flavor, broil or grill the ribs after pressure cooking. This step adds a delightful charred color and smoky taste that will elevate your dish to new heights.

Rowdy Hog Smokin BBQ Recipe

Ingredients for the Sauce

  • 1/2 cup water
  • 6 Tbsp soy sauce, regular (we recommend the Kikkoman brand)
  • 170g / 6 ounces apple
  • 60g / 2 ounces onion
  • 2 Tbsp honey
  • 2 Tbsp dark brown sugar
  • 2 Tbsp mirin (sweet rice wine)
  • 1 Tbsp minced garlic
  • 1 Tbsp minced ginger
  • 1 tsp sesame oil
  • A few sprinkles of ground black pepper

Main Ingredients

  • 1/4 cup mirin (sweet rice wine)
  • 1 tsp black peppers, whole
  • 60g / 2 ounces onion
  • 50g / 1.8 ounces green onion
  • 30g / 1 ounce garlic cloves
  • 1.3 kg / 2.9 pounds baby back ribs or pork spare ribs
  • 300g / 11 ounces baby potatoes, cut into large chunks
  • 200g / 7 ounces carrots, cut into large chunks
  • 1 Tbsp = 15 ml, 1 Cup = 250 ml

How to Make Rowdy Hog Smokin BBQ

  1. Blend all the sauce ingredients in a food mixer or food processor until you have a smooth mixture. Set it aside for later.

  2. Prepare the pork ribs by removing the tough membrane from the underside. Cut the meat between the bones to separate the ribs.

  3. Boil a large pot of water and add mirin, black peppers, onion, green onion, garlic cloves, and the pork ribs. Boil for approximately 8 minutes, then drain the water and rinse the ribs under cold running water.

  4. Place the pork ribs in the Instant Pot and pour the sauce over them. Add the baby potatoes and carrots on top.

  5. Close the lid and ensure the vent is in the sealed position. For baby back ribs, set the Instant Pot to pressure cook on high for 10 minutes. For spare ribs, cook for 25 minutes. Wait for 10 minutes for natural steam release, then perform a quick release. Be cautious of any remaining steam. Unlock and remove the lid.

  6. If desired, set the Instant Pot to “Sauté” for 8 minutes to simmer, cook, and reduce the sauce. For an enticing touch, transfer the ribs, potatoes, and carrots to a baking tray or oven-friendly dish, brush them with the sauce, and broil for 2 to 4 minutes or until charred.

  7. Serve your delicious Rowdy Hog Smokin BBQ with a bowl of rice and some kimchi for an unforgettable taste experience.
