Panera Bread, one of the most beloved restaurants out there, never fails to impress me. Their commitment to serving wholesome, fresh, and downright delicious food is unparalleled. It’s no wonder I have a plethora of favorite dishes on their menu.
One particular dish that caught my attention from the first bite was their BBQ Chicken Salad. The tantalizing combination of savory lettuce, fresh veggies, succulent chicken, and the sweetness of BBQ sauce was absolutely irresistible.
If, like me, you were a fan of Panera’s BBQ Chicken Salad (even though it’s no longer on their menu), you’re in for a treat! You can recreate this incredible salad in just 15 minutes or less. Trust me; it’s even better than the original.
I’ve made this salad multiple times since last spring and realized that I never shared the recipe with you. Shame on me! But fear not; I’m here to fix that oversight.
Recreating the BBQ Chicken Salad Magic
Last spring, I whipped up this salad after grilling some BBQ chicken and corn on the cob for dinner. It took me less than 5 minutes to gather all the ingredients and toss them together. Even if you have to grill the chicken (indoors or out), it only takes about 6-8 minutes to cook. While the chicken sizzles, chop the rest of the ingredients, and if you have a spare moment, prepare the lime crema. In just 15 minutes, dinner will be on the table, and you’ll be in salad heaven.
If you have the means to grill the corn, I highly recommend it. However, if you don’t, worry not! Canned corn works just as well. This salad remains simple and delicious regardless of your corn-cooking method.
And let’s not forget about the homemade lime crema. With just a few ingredients, you can whip up a delightful dressing that takes this already incredible BBQ Chicken Salad to new heights. Greek yogurt, lime juice, garlic, cumin, and salt are all you need to achieve that tangy and creamy goodness. Pro tip: prepare the dressing ahead of time, store it in a jar, and give it a good shake before pouring it over your salad. Trust me; it’s worth it.
Now, feel free to substitute ranch dressing for the lime crema if that’s more to your liking. But take it from me; the lime crema truly makes this salad sing!
