Creative Ideas for Pork Tenderloin Leftovers

Do you ever find yourself cooking extra food just so you can enjoy the leftovers? I know I do, especially when it comes to pork tenderloin. The possibilities are endless – from grain bowls to salads to sandwiches. In this article, I’ll share two of my favorite ways to make the most out of pork tenderloin leftovers: a delicious sandwich and a refreshing salad.

Make a Flavor-Packed Pork Tenderloin Sandwich

After preparing my mouthwatering Spiced Pork Tenderloin, I couldn’t resist using the leftovers for a fantastic sandwich. Now, I take my sandwich-making skills very seriously, so I went all out with this one. But feel free to put your own twist on it and let your creativity shine.

For me, the key to a perfect sandwich lies in the sauce. I whipped up a delightful Chimichurri Mayo using a blend of fragrant spices: oregano, dried shallots, parsley, pepper flakes, dried cilantro, and dried chives. When it comes to sourcing spices, I highly recommend The Spice House. Their small-batch, globally-sourced spices add unparalleled freshness to your dishes.

Once you have your sauce, it’s time to choose the cheese. I opted for provolone, but any mild cheese will do. The goal here is to let the flavors of the pork tenderloin and mayo shine, so a mild cheese pairs beautifully. Then, feel free to add your favorite toppings! I added peppery arugula, tangy Marinated Onions, and crisp pickle slices to complete this masterpiece. The result? Absolute perfection.

Create a Vibrant Tenderloin Salad

Another fantastic way to enjoy your leftover pork tenderloin is by incorporating it into a refreshing salad. You can make a large platter or scale it down for a simple and satisfying individual salad. The choice is yours!

When it comes to dressings, there are countless options that pair well with pork tenderloin. However, I opted for my Creamy Tomato Dressing, which adds a playful twist to the flavor profile. The dressing is incredibly easy to whip up, making it a go-to choice.

For the other toppings, I selected seasonal vegetables that were at their peak. Cherry tomatoes, cucumbers, avocados, and, of course, Marinated Onions all made it onto my vibrant salad. As for the greens, I chose crunchy romaine lettuce for an added textural element.

The beauty of pork tenderloin is its versatility, allowing you to experiment with various delicious combinations. In fact, I often prepare two pork tenderloins to ensure I have plenty of leftovers for the week.
