A Hearty and Flavorful Soup

At the heart of this soup are tender chicken and pumpkin (or butternut squash). But it doesn’t stop there. To round out the flavors, we add plantains for their potato-like taste and carrots for that extra touch of heartiness.

The natural flavors of these ingredients meld together beautifully, creating a thick and satisfying soup.

Getting the Texture Just Right

While getting the flavors right is easy, achieving the perfect texture can be a bit more challenging. To avoid mushy vegetables, it’s important to check on them periodically during the cooking process. This will allow you to adjust the cooking time to suit your preference.

The Secret Ingredient

For an extra boost of flavor and thickness, I use Grace flavored soup mix. This mix, commonly used throughout the Caribbeans, enhances the taste of soups and stews. However, if you don’t have access to it, you can still achieve delicious results without it.

Bold Flavors of Jamaica

Of course, this soup wouldn’t be truly Jamaican without the addition of garlic, green onions, allspice, and scotch bonnet peppers. The garlic adds a pungent and sweet aroma, while the green onions provide a sharpness. The allspice complements the pumpkin, adding warmth to the dish, and the scotch bonnet peppers bring the heat.

Making the Soup

To start, sauté the aromatics with the chicken to enhance the flavors. Then, add the remaining ingredients and let the soup simmer until it’s ready to serve. Traditionally, Jamaican chicken and pumpkin soup is served on Saturdays and includes dumplings, but feel free to skip the dumplings or add them if you prefer.

Easy and Versatile

You don’t have to wait for the weekend to enjoy this delicious soup. It’s incredibly easy to make and can be prepared in advance. Keep in mind that it may thicken up as it sits, so you may need to add a little more chicken broth before serving.

Either way, the flavors and textures of this dish are simply delightful, making it a perfect cold-weather favorite. So why not make a large pot and invite some friends over?
