Chicken Tacos al Carbon

Tacos, oh how we adore them! Who can resist the allure of a perfectly crafted taco? It’s as if the universe aligns when you take a bite – the birds sing, the stars shine brighter, and all feels right in the world. Tacos truly are a gift to be cherished.

As a proud Texan, tacos hold a special place in my heart. They are the food I constantly crave and yearn for. In fact, tacos are a regular feature on our menu at home. From breakfast egg and cheese tacos to fish tacos adorned with crispy cabbage slaw, we can’t get enough. And of course, we can’t forget about the classic Tex-Mex favorite – chicken tacos al carbon.

Tacos al carbon, meaning “cooked over coals” in Spanish, are among my personal favorites. Traditionally, tacos al carbon feature grilled meats like beef or chicken, often accompanied by onions and sometimes peppers. While I prefer to make these delectable treats on a cast iron grill indoors, you could also use a large cast iron or nonstick skillet. These are the same tacos I adored as a child, and now my own daughters delight in devouring them too!

Chicken Tacos al Carbon – Serves 6

  • 3 boneless, skinless chicken breasts, butterflied
  • 1/4 cup fresh lime juice (2 limes)
  • 1/4 cup fresh orange juice
  • 1 clove of minced garlic
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil
  • 1 sweet yellow onion, thinly sliced into half rounds
  • 12 to 15 flour tortillas

To begin, slice the chicken breasts horizontally, creating six thin pieces of chicken.

Next, prepare the marinade by whisking together the lime juice, orange juice, minced garlic, cumin, kosher salt, and olive oil. Place the marinade in a gallon-sized plastic zip-top bag and add the chicken breast slices. Allow the chicken to marinate in the refrigerator for 30 minutes to an hour. Before cooking, remove the chicken from the marinade and pat it dry with a paper towel to ensure a nice browning effect and prevent the citrus juices from sticking to the grill.

Heat a cast-iron grill pan or a large skillet over medium heat for approximately 5 minutes. Add 2 tablespoons of canola or olive oil, followed by the thinly sliced onions. Cook the onions until they become translucent and develop a caramelized touch. Once the onions have cooked down, move them to the side of the grill or pan.

Now, it’s time to add the chicken breasts. Cook each side for 5 to 6 minutes until the chicken is beautifully browned and cooked through.

After grilling, slice the chicken diagonally into thin strips.

Roll the tender meat and caramelized onions in fluffy flour tortillas. Serve them with a delightful assortment of pico de gallo, guacamole, sour cream, and cheese.
