The Recipe

Here’s what you’ll need:

  • 2 (16 oz) cans Bush’s® White Chili Beans
  • 1 (14.5 oz) can chicken broth (or 2 cups chicken broth)
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 (4 oz) can chopped green chiles, drained
  • 3 tablespoons all-purpose flour
  • 2 teaspoons ground cumin
  • 1 1/2 cups chopped, cooked chicken breast

Instructions:

  1. In a Dutch oven or soup pot, sauté the chopped onion in olive oil until translucent, for approximately 4 minutes.

  2. Add the chopped green chiles, flour, and ground cumin to the pot. Cook and stir for two minutes.

  3. Add the white chili beans, chicken broth, and fire-roasted diced tomatoes. Bring the mixture to a boil, then reduce heat and simmer for 10 minutes or until thickened.

  4. Finally, add the chopped, cooked chicken breast and heat through.

  5. Serve your white chicken chili with garnishes like cheese, sour cream, salsa, or even some crunchy tortilla chips for added texture.
