What Are Short Ribs?

Short ribs are the five ribs located in the chuck/shoulder portion of the cow. While not ideal for steaks due to the overworked meat around them, they are full of flavor. Through the braising cooking method, the meat becomes as tender as a roast, making it a perfect choice for this recipe.

There are different styles of beef short ribs, including English-style and Flanken-style ribs. For this recipe, we will be using English-style short ribs.

How To Cook Short Ribs In A Dutch Oven

Although the list of ingredients may seem long, cooking short ribs in a Dutch oven is actually quite easy. The result is well worth the effort!

  1. Sear: Begin by browning the ribs in vegetable oil. Sear them in batches until they are nicely browned on all sides. Transfer the ribs to a clean plate and set aside.

  2. Saute: In the same Dutch oven, saute vegetables and add flour, tomato paste, garlic, mustard powder, and salt. Cook until the vegetables are soft and the flour has coated everything.

  3. Deglaze & Simmer: Add red wine to the Dutch oven and deglaze the bottom of the pan, scraping up all the delicious brown bits with a wooden spoon. Return the ribs to the pot and simmer until the wine has reduced by half.

  4. Bake: Pour in beef stock and add fresh herbs. Cover the Dutch oven and bake for 2.5 to 3 hours until the meat becomes tender and easily falls off the bone. Every half hour or so, spoon the flavorful liquid over the ribs.
