Just layer sliced onions, beef short ribs, shallots, garlic, and carrots in the pot. Then pour in the red wine, beef broth, and, if desired, a splash of cognac for an extra layer of flavor.

Cover the pot and let the magic happen. If you’re using a crockpot, the ribs won’t have as much caramelization, but fear not – you can simply broil them in the oven for a few minutes after cooking to achieve that perfect caramelized crust.

A Mushroom Masterpiece

No French-style stew is complete without mushrooms. Instead of slow-cooking them, we found that caramelizing them in butter just before serving brings out their full flavor. In a large skillet, cook the mushrooms in butter until golden and caramelized. Add a pat of butter and fresh sage, allowing the butter to brown around the mushrooms. Season with salt, and voila! You have a delicious, crispy mushroom topping to garnish your short ribs.
